This is a super easy seasonal pancake recipe that the whole family can enjoy!
1 cup - rolled oats
1 1/4 cup - oat milk
1 - organic banana
1/3 cup - pureed pumpkin
1 tsp - pumpkin spice mix - recipe here
1 tbsp - baking powder
1 tbsp - maple syrup
Add all ingredients to a high speed blender and blend until completely smooth.
Heat a griddle or cast iron pan to medium/high heat.
Add a small amount of ghee or avocado oil to the pan.
Drop 1/4 cup of batter into the pan and cook until the top is bubbling and edges are golden.
Flip and cook until the underside is golden.
