Pumpkin Oat Pancakes

This is a super easy seasonal pancake recipe that the whole family can enjoy!




Ingredients:

  • 1 cup - rolled oats

  • 1 1/4 cup - oat milk

  • 1 - organic banana

  • 1/3 cup - pureed pumpkin

  • 1 tsp - pumpkin spice mix - recipe here

  • 1 tbsp - baking powder

  • 1 tbsp - maple syrup


Method:

  • Add all ingredients to a high speed blender and blend until completely smooth.

  • Heat a griddle or cast iron pan to medium/high heat.

  • Add a small amount of ghee or avocado oil to the pan.

  • Drop 1/4 cup of batter into the pan and cook until the top is bubbling and edges are golden.

  • Flip and cook until the underside is golden.
