These soft chewy cookies are a healthier alternative to your traditional cookie. They are gluten free, dairy free, refined sugar free, low carb and vegan!
If you love uber sweet cookies, these are not for you. However, even though these are healthier, they taste great! There's nothing worse than a cardboard cookie. These are made with maple syrup, almond flour, and dark chocolate. They are easy to make, take little time to bake, and satisfy that cookie craving.
Ingredients:
2 tbsp coconut oil
2 tbsp pure maple syrup
1 tbsp flaxseed
3 tbsp water
1 tsp vanilla
2 cups almond flour
1/2 tsp baking soda
1/4 tsp sea salt
1/4 cup vegan dark chocolate chips
sliced almonds
Directions:
Preheat oven to 375 degrees and line a baking sheet.
Mix flaxseed and water in a small bowl and set aside.
Whisk softened (not completely melted) coconut oil and pure maple syrup in a large bowl. Add the flaxseed mixture and vanilla and whisk until well combined.
In a medium bowl, mix together almond flour, baking soda, and sea salt. Pour the dry mixture into the wet ingredients and mix until combined. Stir in the chocolate chips.
With clean hands, form the mixture into small balls and place onto baking sheet. Gently press them down and press in a couple pieces of almond slices.
Bake until edges are golden brown, about 12-14 minutes. Baking times may vary. Let cool on baking sheet for 5 minutes and then transfer to a wire rack.
