Cherry Coconut Crumble



Get the most out of cherry season with this delicious Cherry Coconut Crumble recipe! Cherry and Coconut are the perfect marriage of flavours. This recipe uses coconut sugar rather than conventional granulated sugar making it less sweet and more palatable.


I love a good crumble and it's the perfect summer dessert recipe that EVERYONE will love.


Ingredients:


Fruit Base:

5 cups - chopped cherries

1/4 cup - coconut sugar

1 tsp - vanilla extract


Crumble Topping:

2 cups - rolled oats

1/4 cup - coconut sugar

1/2 cup - gluten free flour

1/4 cup - unsweetened shredded coconut

1/2 cup - ghee (partially melted)


Method:


Preheat oven to 350 degrees.


Prepare an 8 inch baking dish with a coconut or olive oil spray. In your baking dish combine the fruit base ingredients until well coated. Pat down into an even layer and set aside.


In a large bowl, combine rolled oats, coconut sugar, gluten free flour, and unsweetened coconut. Add the ghee and mix well with two forks or clean hands (I find this works best). Mix until your mixture resembles a good crumble. Spoon the topping evenly over your fruit.


Bake for 45 minutes, until the fruit is bubbling around the edges and the topping is golden brown.


Spoon into dessert bowls and top with coconut ice cream.
